Gutti Vankaya Kura/Stuffed Brinjal Fry
Ingredients
Brinjal/Egg Plant/Vankaya round shaped 8-10
Salt to taste
Oil 3 tbsp

For Filling
Black-gram Dal 1/2 tsp
Bengal gram Dal 2 tsp
Dhania 1tsp
Fenugreek seeds 1/4 tsp
Jeera 1 tsp
Red Chillies 4-5
Hing(Asfoetida) pinch

Method..

  1. Wash the brinjals don't remove the stem and make a plus shape slit from the bottom side of the stem.
  2. Take kadai add 1/2 tsp of oil fry Black-gramdal, Bengal gram dal, dhania ,jeera, Fenugreek seeds and keep it aside.
  3. Then add redchillies in the same kadai .
  4. Grind all the fried dals along redchillies add salt to it so that you don't have mix salt again.
  5. Now once it grinded in to coarse powder start filling Brinjal's with this powder.
  6. Take deep frying pan heat oil . Once oil is heated add Brinjal's one by one cover the pan for 5 mins.
  7. Leave the Brinjal in pan until it becomes soft and tender ...stir fry once every now then so that it doesn't get burnt.
  8. There goes our Gutti Vankaya kura(Stuffe brinjal fry). Have it with hot white rice and ghee ....aha swaragam.
