Gutti Vankaya Kura/Stuffed Brinjal Fry
Ingredients
Brinjal/Egg Plant/Vankaya round shaped 8-10
Salt to taste
Oil 3 tbsp

For Filling
Black-gram Dal 1/2 tsp
Bengal gram Dal 2 tsp
Dhania 1tsp
Fenugreek seeds 1/4 tsp
Jeera 1 tsp
Red Chillies 4-5
Hing(Asfoetida) pinch

Method..

  1. Wash the brinjals don't remove the stem and make a plus shape slit from the bottom side of the stem.
  2. Take kadai add 1/2 tsp of oil fry Black-gramdal, Bengal gram dal, dhania ,jeera, Fenugreek seeds and keep it aside.
  3. Then add redchillies in the same kadai .
  4. Grind all the fried dals along redchillies add salt to it so that you don't have mix salt again.
  5. Now once it grinded in to coarse powder start filling Brinjal's with this powder.
  6. Take deep frying pan heat oil . Once oil is heated add Brinjal's one by one cover the pan for 5 mins.
  7. Leave the Brinjal in pan until it becomes soft and tender ...stir fry once every now then so that it doesn't get burnt.
  8. There goes our Gutti Vankaya kura(Stuffe brinjal fry). Have it with hot white rice and ghee ....aha swaragam.

Cooking Made Easy a blog ...which started out as an inspiration, based on a movie which I saw recently. Let me start introducing my self... I am Sravani Aka Shilpa Dinesh...currently in US(Sunnyvale, CA).. I came to US just after my marriage and haven’t got any crash course from my mom on cooking and as many of you, I didn’t volunteer cooking before my marriage so and here I was in US with absolutely no experience on cooking so I turned to internet for help and thanks to some of wonderful blogs on cooking, I started my own battle in kitchen and I never knew that cooking would be so much fun and with year and half just breezed since I started cooking. And honestly I have improved my cooking in taste, style and time of preparation by leaps and bounds, thanks to Dinesh for his critical comments and at the same time encouraging me do better and guys, guess what, my recipes made Dinesh to put extra pounds . I ain't kidding.

Now after few set of recipes of my own here I am starting my own blog with the recipes of my own Please check the different recipes some of them you may not heard about, so just read thru and post your comments/ suggestions
